Food grade microalgae-based biopigments and their production technique versus synthetic colorants

In the food industry, synthetic color-active compounds can be added as additives to replace natural colors that are damaged during processing. This addition reduces batch-to-batch fluctuation and increases development of new or desired products appealing consumers where absent. Synthetic colorants cannot produced by any bioprocess. contrast, Food Drug Administration declared algae such Chlorella, Cryptothecodinium, Dunaliella Nannochloropsis, Nitzschia, Phaeodactylum, Schizochytrium, Spirulina trustable sources pigments sources. These microalgae photoautotrophic species found on "Generally Recognized Safe-GRAS" list additives. Microalgae-derived pigments, which also known nutraceutical supplements, have been recently used in functional products. Some them health color supporters because their excellent antioxidant properties block oxidative reactions lipid-rich Their unique being harmless environment were scientifically proven well. As a result, demand for commercial use is increasing gradually. However, bioprocess huge scale very limited due some environmental factors hard produce continuously. The scope this review was provide concise knowledge about biopigments extracted from production methods clarify current implementations industry. Additionally, food-grade compared with ones. primary issues bioprocesses highlighted, expected studies discussed would conducted soon.
